LUNCH TIME SNACK CRACKERS
We love this snack in our home. You can make as much or as little as you need.
Ryvita Dark Rye whole grain crispbread (or any variety that you love)
Yoso vegan cashew based cream cheese
We also like to use Cedar Rosemary Sweet Potato, Cashew Dill Mint & Edamame Basil Tahini
Top with cherry tomatoes & hemp hearts (I also like to sprinkle nigela seeds)
Add a healthy amount of hemp hearts for optimal nutrition
Shown here are Pea Shoot & Sunflower Microgreens but there are many varieties that are great (pick your favourite)
GREEN LENTIL PASTA WITH MICROGREEN PESTO
Makes 2-4 servings depending on appetites. We are highly active and consume large meals. For most, this recipe would do well for 4 or have enough for left overs.
I use Explore Cuisine pasta as it is organic, plant based, highly nutritious and tastes great. There are multiple options from green & red lentil to black bean & chick pea. Shown here green lentil penne with a small amount of red lentil spaghetti.
Microgreen Pesto Recipe
2 cups Microgreens of choice (I used Pea Shoots)
2 cups of Basil
Juice from 1 lemon
2/3 cup vegan parmesan or nutritional yeast
1/2 cup of almonds
1 cup extra virgin olive oil
Pulse almonds in a blends until an almond flour consistency is reached. Set aside.
In a blender, add the Microgreens, basil, garlic, lemon juice, parmesan cheese and half of the oil
Add the pulse almonds and remaining olive oil. Blend until smooth. Immediately enjoy or store in an airtight glass coiner for up to 5 days. If you would like to freeze add a little oil to the top and freeze for up to 3 months.
One box of red lentil spaghetti (227 grams)
6-8 asparagus (or more depending on preference)
12 cherry tomatoes
14 cremini mushrooms
Saute mushrooms, asparagus and cherry tomatoes. Follow directions to boil pasta. Drain pasta and rinse with hot water. Move back to pot. Add in Microgreen Pasta. Mix well. Add in vegetables and toss or plate and add vegetables on top. Once everything is plated top with Broccoli Microgreens. I like to use them for their mild and delicate flavour.
