In its simplest term Micorgreens are nutrient dense and flavour packed versions of full grown vegetables.  

A Microgreen starts as a seedling of a vegetable or herb.  Once they begin to grow they are considered a sprout.  Once the sprout begins to grow it is officially called a Microgreen.

Microgreens are a live food, which makes many nutrients more available for digestion.   They are considered a functional food which means that they promote health and prevent disease.

Though minuscule in size, Microgreens are concentrated in nutrients.  Studies have shown they are loaded with vitamins such as vitamins C, E and K, lutein and beta-carotene with as much as 40 times the amount of their mature versions.

The Journal of Agricultural and Food Chemistry has written numerous articles around the fact that Micorgreens are nutrient dense and they are a healthy component to use as an aid in disease prevention.
